My favourite Thai soup

An adapted version of the traditional Thai Tom Kha, this soup is gut friendly, nourishing and soothing.


Give it a go and adapt it to your own taste. It may become one of your favourites as well!





Ingredients (1 large portion)

  • 250ml of home-made bone broth (chicken or fish)

  • 1 stalk of lemon grass

  • 1 kafir lime leaf

  • 2-3 slices of fresh ginger

  • handful of fresh mushrooms, sliced (chestnut or closed cup)

  • 1/4 red bell pepper cut into strips

  • 1-2 baby pak choi

  • 50ml coconut cream

  • 1/2 lemon, juiced

  • 100g cooked chicken or prawns

  • Fresh parsley or coriander


Procedure

  1. Combine broth, lemon grass, lime leaf and ginger in a pot on medium heat and simmer for 5-10 min until fragrant.

  2. Add the rest of the ingredients and cook for another 2 minutes.

  3. Serve with fresh parsley or coriander
